Plantain/Banana Cutlet



Ingredient:
Plantain -1(boiled)
Potato, medium-1(boiled)
Onion-1,finely chopped
Green chilli-1,finely chopped
Jeera-1tsp
Chillipowder-1tsp
Besan-2tbsp
Riceflour-2tbsp
Salt to taste
Gingergarlic paste-1tsp
Fresh coriander-1tbsp
Bread crumbs as required
Oil for shallow fry


Method:
1. Grate the plantain and potato using grater.Mix all the other ingredients mix well.
2.Make a lemon size round balls out of the mixture.Roll the balls` in bread crumbs and
press the balls gently flat  in a palm to give them patty shape.Prepare these and keep it aside.
3.In a wide pan  add 2-3tbsp of oil,shallow fry all the patties until golden brown evenly on both sides.
Serve with tomato ketchup or green chutney.

Balekaayi Palya/Plantain


Ingredients:
Balekaayi/Plantain-3
Onion-1,finely chopped
Tomato-1,chopped
Curry leaves-1sprig
Tamarind juice-2tbsp or to taste
Salt to taste
Oil-2tsp
Mustard seeds-1/2tsp
Fresh coriander to garnish


For grinding:
Fresh coconut-1/2 cup
Onion -1,roughly chopped
Tomato-1, roughly chopped
Sambhar powder-2tsp
(you can substitute sambhar powder with chillipowder,dhaniyapowder and turmeric.)


Method:
1.Wash and peel the plantain and cut them into bite size pieces
and soak them in clean water with little salt so they don't turn into
black colour.
2.Grind coconut,onion,tomato and sambhar powder into fine paste.
3.Heat a oil in a pan add mustard,when they started to splutter.add onions
and fry until translucent.Now add tomatoes,curry leaves and salt saute for
minute.
4.When tomatoes becomes soft add chopped plantain saute for second and add grinded masala paste,tamarind juice with 1/2cup water,close the lid of a pan and allow to cook on a low flame until plantain are soft.
5.Take out of the heat,garnish with coriander.
This goes well with Chappati,Akki roti,rice and dosa's.

Vegetable/Tarakari Bajji





Ingredients:

Besan-1cup
Jeera-1tsp
Ajwain(oma kalu)-1/2tsp
Kalonji/nigellaseeds/erulibeeja-1/2tsp
Sodabicarb-1/2tsp
Chillipowder-1tsp
Salt to taste

Vegetables used are:

Potato,plaintain(balekaayi) and onion,each thinly sliced into roundels.

Method:

Mix the besan, jeera,ajwain,kalonji, water, chillipowder,sodabicarb and salt in a bowl, beat till smooth. Leave this batter aside for half an hour.

Heat the cooking oil in a deep pan.

Take vegetable slice one by one, dip into the besan batter and deep-fry till golden brown

Place the bajji's on paper towels to absorb excess oil.

serve with tomato ketchup or green chutney.

NOTE:Vegetables like ridgegourd,bananapeppers bajji's can be prepared in the same manner.

While serving sprinkle chaat masala if you like.
