Water Melon Rind Dosa/Kalangadi Hannina Sippe Dose




As all of us know that most of the fruits nutrition contains in their outer skin,peelings and rind but still most of us discard them and consume only the fruit.Today I am posting this  dosa recipe which is made up of  rind of a watermelon.This recipe is perfect for summer which is lighter and cooling on stomach and easily digestible. The watermelon rind is having lot of health benefits and helps in improving immune system,nervous system and eye health to name a few.

Ingredients:
Rice-2.5cups
Water melon rind-2cups
Fresh coconut-1/4cup
Green chillies-2-3
Cumin/jeera-1tsp
Ginger-small piece
Oil for preparing dosa as required
Salt to taste  

Method:
1.Wash and soak rice for 4-5hours,Grind rice along with coconut,watermelon rind,green chillies,ginger and jeera into fine paste adding little water.
2.Add water to make it thin as buttermilk consistency.
3.Add salt to taste.mix well, no need to ferment.Prepare dosa's like neer dosa.
4.Heat tawa,take a ladle full of batter and spinkle first outwards in a circle then fill the gaps
 evenly,sprinkle little oil over dosa.
5.No need to cook both sides of dosa.Fold twice and serve with coconut chutney or any vegetable side dish.


Note:
1.Don't throw the watermelon peels when you finish the fruit,wash them and carefully 
cut the rind part, the part between the green outer skin and the red part of the fruit.
which is white or pinkish in colour.
2.Chop them into pieces and use.
3.If you want more spice you can use more chilies.
4.No need to ferment the batter,and it will stay in refrigirator for 2-3 days.

Banana Ice Lollies/Banana Choco Popsicles

These lollies are inspired from one of the pinterest pins.Ideal for kids parties and as a snack.It is the healthy way to serve fruit to kids.

Ingredients:
Banana's-4
Milk chocolate-200gms (broken into pieces)
Sprinkles(Hundreds and thousands) -as required
wooden popsicle sticks-8(I have used wooden skewers cut into halves)
Wax or parchment paper



Method:
1.Cut a wax paper according to tray size and line paper on the tray.
2.Cut banana's into halves,insert sticks into banana's as lollipop and lay them on a tray lined with wax paper.Keep the tray in the freezer for 1-2 hour's.
3.Melt the chocolate in a microwave  for 2-3 minutes.
4.Take out the frozen banana's from the freezer,dip them in the melted chocolate and coat them well.
5.When its still chocolate is wet sprinkle hundreds and thousands on top of the lollies and lay them on a tray lined with wax paper and freeze them for 1hour.
6.Now its ready to serve.

Note:
1.Instead of sprinkles you can also use chopped nuts.
2.These can be prepared in advance and can be freezed in ziplock bags,freezes upto 2 months.
3.Take out of the freezer and keep it in the refrigerator for half n hour before serving.

Apricot Salsa




Ingredients:
Apricot,firm ripened ones-6
Red bell pepper-1/2 or small one
Fresh or pickled Jalapeno chillies to taste
Fresh coriander-3-4 sprigs
Lemon or Lime juice-1Tbsp or to taste
Sugar-1/2tsp
Salt to taste
Pepper powder-1/2tsp

Method:
1.Remove the seeds from the apricots and finely chop them.
2.Finely chop the bell pepper,jalapeno and coriander.
3.In a bowl mix chopped apricot, bell pepper,jalapeno, coriander,lime juice, sugar,salt and pepper
mix well.
4.Serve with Tortilla chips or any chips of your choice.

Note:
1.Choose the apricots which are firm and ripen.
2.You can also try this recipe with peaches and nectarines.
3.If the apricots are sour add sugar and lime juice adjust more or 
less accordingly.

Mixed Berries Muffin With Yoghurt


Ingredient:
Yogurt-1cup/240ml
Large egg-1,lightly beaten
Sunflower or Vegetable oil-1/3 cup/80ml
All purpose flour-2cups/260gms
Granulated white sugar-1/2cup/100gms
Baking powder-1 1/4tsp
Baking soda-1/2tsp
Salt- 1/4tsp
Vanilla extract-1/2tsp
Fresh or Frozen Mixed berries-11/2cups/100gms(Raspberries and blueberries)



Method:
1.Preheat oven to 375'F/190'C.Line the muffin tray with paper liners.
2. In a large mixing bowl whisk together the lightly beaten egg,yoghurt,oil and vanilla extract.
3.In another bowl mix the flour with sugar, baking powder,baking soda,and salt.
4.Gently stir the berries with little flour and keep it aside.
5.Gently fold the wet ingredients into the dry ingredients and stir well until all the mixture comes together and well combined.
6.Now fold floured berries into the mixture gently and evenly fill the muffin cups with the batter.
7.Place the tray on the centre rack of the oven and bake for 15 -20 minutes or until a toothpick inserted in the centre of a muffin  just comes out clean.
8.Transfer to wire rack and let cool  and then serve.



Note:
1.I have used fresh Berries,you can use frozen ones also,but don't defrost.
2.You can use any berries.I have used Raspberries and Blueberries.
3.Always make sure to position the tray of a cake or muffin on to the centre
 rack of the oven.
4.Yields 24 small muffins.

Green Apple Chitranna


The winter is in full swing with unbearable cold,one good thing we can look forward in winter is winter crops.Among number of  winter crops apples top the list with its amazing nutritious properties as a saying eating apple a day keeps the doctor away.We have tasted apples in desserts,pudding and pastries but not much in savoury dishes apart from chutneys.Here is my take on popular rice dish chitranna which got a little twist with the addition of grated sour apple instead of lemon or lime juice.This gives a rice new fresh taste  and easy way to add the fruit to your daily intake.Hope you like it. 

Ingredients:
2-Green Apples sour variety(grated)
2cups-Cooked rice
2 tbsp-vegetable or sunflower oil+ oil extra oil for mixing
1/2 tsp- cumin seeds
1/2 tsp- mustard seeds
1/2 tsp- turmeric
4- green chillies finely chopped
12 to 15 fresh curry leavesA
1 tbsp- channa dal/bengal gram
1tbsp-urad dal/blackgram
1/4 cup- roasted peanuts
1/4cup-fresh coconut,grated
1 salt to taste
Fresh coriander chopped



Method:
1.Heat the oil in a frying pan on medium heat,add mustard and cumin and allow them to splutter

2.Now add both dals,make sure to keep an eye on the flame other wise it will burn the tempering,after the dals become lightly brown add green chillies,red chillies,curry leaves and turmeric and salt, saute for 1 minute,mix well
3.And grated apple with little water(1Tbsp),cook for 3-4 minutes and take out of the flame and keep aside to cool for 5 -10 minutes.



For mixing:
Take a wide bowl and add all the rice,break the lumps very gently with wooden spatula(clean hand is better),now add the cooled tempering,chopped coriander,and 1 or 2tbsp of oil,roasted peanuts,grated fresh coconut on top of the rice.mix gently with wooden spatula ,making sure not to break the rice.If you find salt is less you can add and mix it along with other ingredients.

Before serving garnish with fresh coriander,fresh grated coconut and fried peanuts and enjoy with pickles and curd rice.

Note:
1.If the apple is not sour you can use lemon or lime juice while mixing the rice.
2.You can store the leftover gojju in fridge for 2-3days in refrigirator.

Strawberry Scones





Ingredients:
Self raising flour-200g
Butter-40g
Salt-pinch
Sugar-1tbsp(optional)
Natural yoghurt-125ml
Strawberries-10-12
Milk to glaze

Method:
1.Preheat the oven to 220'c/gas 7/425'F,place a ungreased baking sheet to heat up in the oven.
2.Add the flour, salt,sugar and butter in a bowl,mix with hands until the mixture turns into crumbs.Now mix yoghurt gently and make a dough.
3.Chop the strawberries roughly  and keep it aside
4.Knead the dough lightly on a floured surface to make a smooth dough,mix the berries gently into dough,make a free-form balls on a palm.
5.Gently lift the scones onto preheated baking sheet. Brush the tops with milk and bake for 7-10 minutes until the scones are risen and  golden brown on top.
6.Cool on  a wire rack.Serve with Butter or jam.
Note:
1.You can use any fruits of your choice.

Fresh Fruit Flapjacks



Ingredients:
Raspberries or Blueberries or other soft fruit-1/2cup/(i have used raspberries)
Wholemeal flour-3tbsp
Caster sugar-2tbsp
Oats-3tbsp
Butter-3tbsp 

Method:
1.Take any soft fruit  squash them lightly on a plate  and keep it aside.
2.Take a bowl mix wheat flour,caster sugar,oats and butter and rub them
 in your finger until it becomes crumbly.
3.Grease a loaf tin,put half of the crumbly mixture into loaf tin and press
 it down firmly,now spread the squashed raspberries evenly.
4.Pour the remaining crumbly mixture on top of raspberries and pat it evenly
all over, nice and hard.
5.Tranfer the flapjack loaf tin  into preheated oven at 180'C for 20 minutes.
6. When it is cooked,leave it to cool flapjack completely before cutting into slices.
Note:1.This dish can be frozen for up to one month.
2.This flapjack is ideal for kids lunch box snack.
3.You can use any soft fruit of your choice.

Strawberry Cake


Ingredients:
Plain flour-200gms
Caster sugar-150gms
Oil-100ml
Yoghurt-1/2cup
Eggs-2
Strawberries-10-12
Baking powder-2tsp
Vanilla essence-1tsp



Method:
1.Wash and squash the strawberries roughly and keep it aside.
2.Sift baking powder and flour and keep it aside.
3.In a bowl mix oil,sugar and eggs with vanilla essence and beat nicely.
4.Now add  yoghurt and  mix throughly with wooden spatula or hand mixer.
5.Add flour part by part and mix gently with wooden spatula or hand mixer.
6.Now add squashed berries and mix gently into the mixture.
7.Transfer the mixture to greased and dusted square cake tin and bake in a
preheated oven at 180'c for 30-35 minutes.Take out and cool and cut into square's.
Note:To check whether the cake is done,insert tooth pic or knife into cake, if the knife comes out clean then the cake is done if not bake for another 5-10minutes.

You can use the same batter to make muffins,instead of cake tin use muffin tin,line the muffin case and pour the batter into each case and bake as normal but time may vary so first keep it for 10minutes then you can increase further 5-10 minutes until muffins are done.

Chunky Strawberry Jam


Bread and Jam who wouldn't like it,its every child's favourite snack to eat right..So what better than homemade jam,which is very easy,tasty and healthy to make at home because you can customise sugar addition according to your taste and preference,takes only few minutes to prepare.I have used few raspberries for flavour and colour.It can be prepared with any kind of fruit you like..It can be stored upto one week in the fridge.
 
 


Ingredients:
15-20 strawberries, chopped
Raspberries,few (optional)
1/2 cup sugar or to taste
2tsp tablespoons lemon juice

Method:
 1.Place the strawberries and raspberries into a deep saucepan. Using a masher,squash the strawberries roughly. Add sugar and lemon juice and stir lightly.
 2.Place saucepan on the stove top and heat over low  medium heat until  the mixture becomes thick and glossy.Remove from heat and let cool about 5 minutes.
 3.Pour jam into a jar and chill for at least 1 hour.This will last upto 1 week if you keep in the fridge.


4.Serve with any kind of  bread,perfect for breakfast.

Fruit Chaat



Fruit chaat is a very tasty and healthy way to eat fruits and encourage to add fruits to our daily diet(5 a day) regularly.You can prepare this chaat with Any fruits you like apple,banana,pear,grapes,pineapple,watermelon,papaya etc...


Ingredients:
1 bowl of mixed fruits,cut into bite size pieces(don't chop finely)
1tsp-honey
1/2tsp-chaatmasala
1/4tsp- chilli powder
1/4tsp-blackpepper powder
1/4tsp-black salt
1tsp-lemon juice


Method:
Mix every thing with fruits and serve immediately.

Pancake with Carmelised Apples




Ingredients:
Flour-150gms
Eggs-2
Baking powder-1tsp
Milk-150ml-200ml
Salt-pinch
Sugar-1tbsp
Zest of orange-1tsp
Butter/oil for frying


Method:
Mix everything like a dosa batter consistency.
Heat a non stick pan,add 1 or 2tsp of sunflower oil.
Pour 2tbsp of batter and allow to spread itself.
Cook on both sides until golden brown.


Carmelised Apples
Ingredients:
Apples-2,thinnly sliced
Light brown sugar(muscavado)-2tbsp
Cinnamon powder-1/2tsp
Butter-1tbsp


Method:
Heat a pan add butter when it melts add sliced apples and sugar,
mix well closed the lid and on a low medium flame.
When apples becomes nearly soft and brownish,take out from the flame.
serve warm on pancakes.

Apricot Bars



Ingredients:
Dried apricots,chopped-175g
Unsweetened orange juice-4tbsp
Margarine,melted-6tbsp
Honey-6tbsp
Semolina flour or fine semolina-50g
Plain flour-125g+2tbsp

Method:
1.Cook chopped apricots with orange juice in a pan and simmer for 5 minutes,drain if the juice is not absorbed by the fruit.
2.Heat the margarine and honey in a pan until melted,add semolina and plain flour and mix well.
3.Lightly grease a small square cake tin or loaf tin,press half of the semolina mixture into the base of the prepared tin.
4.Spoon on the fruit mixture evenly and top with the remaining semolina mixture,covering the fruit completely.
5.Bake at 200'C/400'F/Gas6 for 35minutes until risen and golden brown.
6.Cool for 5 minutes in the tin, then cut into bars,again leave the bars to cool on a wire rack completely and serve.

Apple Cake

Apple Cake is a versatile dessert, you can use any fruits like pears,strawberrys,blueberry and raspberry etc.
Dorset apple cake and Somerset apple cakes are the traditional forms of this cake,respectively from Dorset and Somerset,England.It is a English country style,rustic cake...Hope you enjoy my simple and easy version....





Ingredients:

Apple-3-4(peeled,cored and diced)any apples,i have used royal gala
Plain flour-1cup
Eggs-2
Sugar-6tbsp
Salt pinch
Butter-4tbsp(soft)
Baking powder-2tsp
Cinnamon powder-1/2tsp
Nutmeg powder-1/2tsp
Custard/whipped cream to serve
Icing sugar for dusting


Method:
1.Sift plainflour with baking powder and salt.
2.Blend butter and sugar until soft and creamy with a wooden spoon.
3.Add eggs one by one blend nicely with wooden spoon.
4.Now add sifed plain flour to the mixture part by part mix well.
5.Add diced apples and cinnamon powder,mixwell,tranfer the mixture into 
greased square cake tin.
6.In a preheated oven at 180'C for 30-35 minutes.
7.Remove from the oven, leave it to cool on a wire rack.
8.Dust with icing sugar,serve with custard or whipped cream.

Strawberry Milkshake







Ingredients:

Strawberries-10-12,chopped roughly

Strawberry jam-1tbsp

Cold milk-2glasses

Sugar to taste

Cream-1tbsp(optional)

Crushed ice(optional)

Method:

1.First blend the strawberries then add all the ingredients blend until nice and frothy.

2.Pour into glasses and serve.

Apple Crumble




Ingredients:

Apple-3(any variety,i have used royal gala)
Brown sugar-6tsp
Lemon-1
water-11/2cup

For crumble:

Oats-3/4cup
Plain flour-1/2cup
Butter-2tbsp
Desiccated coconut-1/2cup
Brown sugar-1/2cup
Dry fruits-1/2cup

Method:

1. Slice the apples,in a vessel,add apples, brown sugar,juice of
one lemon and water,cook until apples become soft.

2. In a bowl mix oats,plain flour,butter, brown sugar,dessicated
coconut and dry fruits.

3. Arrange the apple slices in a greased baking dish,then top
it with crumble mixture.

4. Bake in a preheated oven at 180'C for 20minutes.

5. Serve warm with yogurt or ice cream.

Figs with Yogurt



Ingredients:

Greek yogurt-1cup

fresh figs-2,chopped

hand ful of raisins and chopped walnuts

honey-2tsp

Method:

1.In a bowl add yoghurt,honey and chopped figs mixwell.

2.In a serving bowl add yoghurt mixture topped with raisins and chopped walnuts.

3.Serve chilled.

Banana Cake




Ingredients:

75gms-Butter
150gms-Brown sugar
175gms-Maida/plain flour
1 1/2tsp-Baking powder
2-Eggs
2tbsp-Milk
1/4cup- Raisins
1/4cup-Walnuts
2tsp-Lime/Lemon juice
2-3-Ripen banana's

Method:

Mash the banana's like a paste and keep aside.

In a bowl beat butter and brownsugar in a wooden spoon or an electric blender.

Add eggs, one by one continue blending and add mashed banana's blend well.

Now add flour in two parts,blend well,if it is thickens add milk.

Add dry fruits blend well and pour into greased loaf cake tin.

Bake in a preheated oven at 180'C for 50 minutes.

Pineapple chaat



Ingredients:

1cup-Pineapple,chopped

1tsp-Green chutney

Salt to taste

1/2tsp-Chaat masala

1tsp-Lemon juice


Method:


In a bowl mix all the ingredients.Serve immediatly.
